From Marseille to Monaco: The Food & Wine of Southern France

The strip of coastline beginning at the rustic seaport of Marseille running all along the Mediterranean to the fairytale principality of Monaco is one of the most beautiful in Europe. In this part of France, tastes are earthy, robust and reflect the influence of the area’s Italian, Spanish and North African neighbors. In this class, we’ll take a look at some of the region’s most memorable dishes. We’ll begin with one of the classics of the Provencal region, an onion and black olive pissaladiere, France’s savory answer to pizza. We’ll also make “les petits farcis” - the traditional miniature stuffed zucchini and tomatoes of Nice. For our main courses, we’ll evoke the docks of Marseille with grilled tuna steaks flavored with olive oil and fresh Mediterranean herbs. We’ll also make one of the most delicious and lesser known specialties of the region - authentic “naked ravioli” known across the border in Italy as “gnudi’. We’ll finish our trip along the coast by celebrating the world famous citrus groves outside Monaco with a dessert of hot spiced oranges.
And, as no meal at Astor Center is complete without wine, once our culinary creations are complete we’ll gather around the table while a resident wine expert guides us through a flight of perfect pairings.
