Italians like to linger at the table, both during and after a meal. Dessert is leisurely, and is often served in three parts. First the sweet itself, which is accompanied by a dessert wine or liqueur, then espresso or coffee, and finally a digestive, like grappa or amaro. Dessert wines and little sweet nibbles are brought out as a way to keep guests at the table, to keep conversation going. Unlike here in the States, in Italy coffee or tea are served only after dessert. In fact, it’s considered rude for a restaurant to rush customers by setting down coffee with dessert!
