1st:Spring pea zuppa, buttermilk vinaigrette, housemade proscuitto, young vegetables - Lucky Twenty
2nd: Lardo roasted carrots, ricotta salata, buckwheat, shiso leaf - Cabernet Franc
3rd: Fresh tagliatelle, braised octopus, n'duja, popcorn, tomato sugo - Tempranillo
4th: 45 day dry aged NY strip, charred onion fonduta, bone marrow panzanella, crispy beef tendon - Ensemble
5th: Sformato of young fennel, roasted lady apples, pinenut granola - Riesling
