The only French Champagne house with Latin roots, AYALA was established in 1860 by Edmond de AYALA and has been owned by Bollinger since 2005. AYALA was one of the elite founding members of the "Ivy League" of the top champagne houses, the Syndicat des Grandes Marques de Champagne back in 1882.

Ayala Brut Majeur NV is a delicate blend of 45% Pinot Noir, 35% Chardonnay and 20% Pinot Meunier with only 8.5g/l of sugar dosage. This Champagne is very aromatic on the nose and very clean on the palate with a great complexity.  (90 points Wine Spectator)

 

Ayala Rosé Majeur NV: with 51% Chardonnay in the blend and only 7.5g/l of sugar, Ayala Rosé Majeur is incredibly crisp and delicate. It has a superb peach salmon color and has a bouquet of red fruits on the nose. Nice balance and generous finish on the palate (90 points Wine Spectator)

 

Ayala Brut Millesime 1999: made out 100% Grand Cru grapes and aged for 6 years on the lees in Ayala cellars, this fabulous champagne made out of 90% Pinot Noir and 10% Chardonnay is the most full bodied of Ayala Champagnes and displays great complexity and very long finish.  (93 points Wine Spectator)

 

Ayala Blanc de Blancs 2002: made out 100% Grand Cru grapes and aged for 6 years on the lees in Ayala cellars, this fabulous champagne made out of 100% Chardonnay is the most elegant champagne of all.  (94 points Wine Spectator)

 

Ayala Cuvee Perle 2000: made out 100% Grand Cru grapes and aged for 6 years on the lees in Ayala cellars with a natural cork, this is this the Prestige Cuvee (also called Tete de Cuvee) of Ayala. The blend is 80% Chardonnay and 20% Pinot Noir (93 points Wine Spectator)
