The famed, sweet wines of Cyprus have been written about and revered since before the Holy Crusades! The ancient traditions for making the wine have changed little throughout the years. Xynesteri and Mavro grapes grown in delimited areas in the foothills of Cyprus' Troodos Mountains are harvested, then laid out to dry on straw mats for at least one week, to intensify the flavors and sweetness of the grapes. The wine never ferments to dryness, remaining sweet, and may sometimes be fortified, not unlike Port.
