Cured Salmon Salad
Whole salmon cured in the traditional Gravlax style garnishing a salad of mixed greens, capers, and diced onion tossed with citrus vinaigrette

Second Course
Roasted Tomato Portabella
Heirloom tomatoes sliced thick and topped with a goat cheese crouton, grilled portabella mushroom and drizzled with a balsamic glaze and smoked tomato couli

Third Course
Snapper en Papillote
A filet of snapper cooked in traditional French style with a Texas flare, securing all of its fantastic flavors and juices and served over a bed of julienne leeks and peppers

Fourth Course
Beef Wellington
Center cut filet of beef tenderloin garnished with blue cheese within a golden brown pastry shell and garnished with a sauce of porcini mushrooms and red wine.

Fifth Course
Dark Chocolate Berry Ganache
Sinfully rich dark chocolate ganache prepared within a chocolate pastry crust and topped with a raspberry port and chocolate sauce.
