This series of seminars with Callaway's Winemaker, Craig Larson, will take you on a journey through various topics of winemaking and will include hands on instruction on vineyard management, the harvest and crush processes, fermentation, barrel aging and even how to taste, serve and store wines. You will also “adopt a vine” for the length of the course, track it’s growth and learn how to harvest and prune your vine when you attend the entire series. You are sure to taste lots of wonderful Callaway wine and we guarantee that it will be fun and interesting along the way!

The Summer seminar is all about fermentation and the winemaking process. The day begins with a guided tour of our production facility with the winemaker. Craig will discuss some of the decisions that go into making wine and demonstrate some of the procedures and chemical analysis that are done in the lab and their effects on the final product. Following your tour you will learn all about rosés. How they are made, how they get their color and how they taste, as we conduct a rosé flight tasting in the lab. The heat of Summer is upon us so this seminar is followed by a casual lunch and nice cool glass of your favorite rosé. This seminar includes a very educational DVD , a collection of recipes that pair well with Callaway rosés and a certificate of completion.
