Second Course

A petite Boston lettuce salad mixed with oranges, grapes, diced tomatoes and hearts of palm, tossed with Dijon vinaigrette

Third Course

Blackened sea scallops on a bed of creamed risotto, infused with a ginger soy butter, spiked with a dash of wasabi cream and accompanied by a medley of yellow squash and carrots

Fourth Course

Braised beef spareribs basted with a Cabernet demi-glace and

complemented by roasted corn grits
