Seared Guajillo Chili Shrimp
Guajillo chili encrusted shrimp
topped with an apricot, ginger chutney infused with sherry
Paired with the 2008 Peju Sauvignon Blanc
Course Two
Spinach Salad
Baby spinach with dried razz cherries, Rouge Blue,
candied pecans, shaved carrots
tossed with a red wine vinaigrette
Paired with the 2006 Peju Merlot
Course Three
Stuffed Pork Tenderloin
White marbled farm pork with Tellegio cheese, sundried tomatoes and apple smoked bacon on top of fava beans and natural juices
Paired with 2006 Peju Cabernet Franc
Course Four
Ancho Chili Brownie
Belgian chocolate infused with ancho chili
garnished with candied pumpkins and hibiscus whipped cream
Paired with 2005 Peju Cabernet Sauvignon
Dinner begins at 7:00pm. $55 per person not including tax and gratuity.
