A Madeira Party

 

Kendall College

 

This month the Northern Illinois branch will step back in time and enter the 19th century for a Madeira Party. A uniquely American event, the Madeira Party combined a black tie dinner with a wine learning experience to create an unforgettable evening. Our Madeira Party will expose the attendees to both current and practically extinct wines.

 

The great culinary teaching institution Kendall College will be the venue for our evening. Chef/Instructor Peggy Ryan has created a fabulous menu designed to complement each of the Madeira wines we’ll drink. Our evening will begin with hors d’oeuvres and a young, dry Sercial Madeira. John Danza will then conduct a discussion on the history of Madeira wines in America. We’ll then proceed with dinner, where we experience a different Madeira with each course, starting from dry and proceeding to very rich wines.

 

Attire is Black Tie for members; others may wear black tie or business suit.

 

Parking is a lot in front of the building.

Reception and Hors D’oeuvres

 

Crisp fried oyster, smoked potato puree, preserved lemon beurre blanc

Torchon of Hudson Valley foie gras, toasted brioche, dried cherry mostarda

Flat iron steak tartare, potato gaufrette, parsley root, fried caper berries

First course:               Pan browned sea scallop, salt cod and potato fritter, lobster reduction

Rare Wine Company Historic Series - Sercial

 

Second Course:          Butternut squash ravioli, browned butter, fried sage, squash agro dolce, pumpkin seed pesto

 

Rare Wine Company Historic Series - Terrantez

 

Third Course:             Heritage chicken “Kiev”/ Hudson Valley foie gras butter / wild autumn  mushrooms/ natural jus reduction

 

Henriques & Henriques – 15-year Verdelho

 

Fourth Course            Gorgonzola dolce mousse, roasted baby beets, saba, Grana Padano crisp
