After many requests from those who attended our last "gone
wild" weekend, and those who missed it, we're feeling a little wild
again...
We will be serving up a variety of game...Quail, Elk, Buffalo, Rabbit and more...
RABBIT
rabbit slowly braised in white wine and cream,
mushroom stock
ALLIGATOR
Alligator tenderloin served Cajun Style with mesquite seasoning and Creole gumbo sauce
QUAIL AND PHEASANT
boneless quail stuffed with duck, served with a tender crepe filled with ragout of pheasant
NORTH AMERICAN ELK
North American Elk strip loin steak prepared with cracked peppercorn and cognac sauce
BUFFALO SHORT RIB
American Buffalo short rib slowly braised in a rich
red wine stock
SEAFOOD OF THE DAY
fresh lightly sautéed in olive oil and garlic
GONE WILD MIXED GRILL
