In Venice the evening begins with wine and cicchetti,
the locals answer to Spanish tapas. Wine bars serve dozens of regional
wines by the glass and, since Italians need to nibble while they drink,
a huge variety of these little plates or snacks are available to taste.
Simple dishes like olives marinated in Prosecco or more complex
preparations like a torta of mushrooms, radicchio and smoky speck. In
this hands-on class we will prepare these and many others, such as
polenta crostini with an airy codfish mousse, crostini topped with
braised artichokes and garlicky shrimp as well the ultra traditional
sweet and sour trout. And then, like the Venetians, we will mingle and
gossip, tasting obscure yet delicious wines from Friuli and the Veneto
home to many of Italy’s most innovative winemakers. We’ll try crisp and
refreshing Soave and Tocai Friulano, deep and nuanced Ribolla Gialla,
elegant Valpolicella, brooding Amarone, and more.
