Just in time for the harvest Wheelhouse Pickles
mastermind Jon Orren has agreed to share his tips and tricks on texture
and taste with you, and will let you in on the secrets of keeping the
flavors of summer and fall on your shelves until you are ready to set
them free.
Sour, sweet or spicy, brined or bathed in vinegar, the crisp crunch of a well-made pickle is the thing! Jon will lead us in a tasting and discussion of pickle flavor and texture components before walking us through the (deceptively easy!) canning process. We'll then get busy making quick pickles, a classic cucumber version and a fruit pickle, before preparing a seasonal pickle based on what looks good at the market that morning, which you can take home with you. We'll finish up by preparing a simple, elegant dinner dish using pickles (they are for more than just snacking out of hand!), and will enjoy it with a pickle-influenced cocktail and a couple of wines chosen for their ability to flatter pickles' notoriously difficult flavor profile.
