In writing this, I'm perplexed for words. What must I say about Pinot Noir that hasn't been said? It all seems cliche.
   The truest thing I can say is that this tasting actually excites me. It is a sad reality that once you make your passion your profession, some of the love goes away. I find myself creating Tasting Themes out of obligation, rather than inspiration. But Pinot Noir is different. Pinot Noir continues to entice me and it continues to teach me. Even the wines I know and love evolve and taste different from one month to the next.
    And, in retrospect, my most formative wine experiences are tied to Pinot Noir. I remember working at a restaurant called Fora in Naples. A customer shared a glass of wine with me. It was so intriguing and intellectual that I took the empty bottle home with me that night and saved the label. Years later I stumbled across that label. It was a 2000 vintage Domaine Romanee-Conti Echezeaux.
    A year later I was working for Morry's of Naples, a co-worker handed me a glass of wine to taste blindly. It was murky, cloudy, and every sniff smelled completely different from the previous. Each sip pulsed with different flavors and textures. It was almost not even like wine. It was just a better beverage. My co-worker held the cork up to my view. It read "Sine Qua Non." Indispensable thing, indeed.
