1) Fried Apple Wood Smoked Bacon with Browned Goat Cheese Rounds and a Frisse and Corn Salad. Red Wine Vinaigrette

2) Traditional Cioppino. Served with Sourdough Crisp (Shrimp, Mussels, Crawfish, Monkfish)

3) Waygu Carpaccio with Potato Tournedos, Grana Padano and Lemon Oil

4) Tempura Fried Tuna with Nori.  Trio of Sauces

5) Strip Sous Vide 3 ways.  A-1 Powder.  Kona with Shallot Butter. Porcini Rub with Aged Balsamic

6) Crostini with Slow Poached Egg, Tomato Roe, and Basil and Parmesan Foam

7) Hot Vanilla Ice Cream with Cold Apple Cobbler Ice Cream.  Carmel Rum Sauce, Phyllo Crisp
