Dining in Provence means long, lazy meals with sun-kissed tomatoes, olives, garlic, crisp white wine, and piquant cheeses. Enjoy the flavors of Southern France as we prepare such Provencale classics as black olive and fig tapenade, ratatouille, soupe au pistou (a vegetable-rich soup served with a dollop of Provencale-style pesto), poulet a la Provencale (chicken with tomatoes, tarragon vinegar, and creme fraiche), crispy potatoes a la Provencale (sauteed and flavored with rosemary and garlic), and lavender honey ice cream.
