Full disclosure: neither of the wines we're planning to pour are actually Champagne. But one is made using the same grapes and production method (a.k.a. Methode Champenoise) as Champagne - and shows some of the same biscuty creaminess that comes from a secondary fermentaiton on the lees (sounds glamorous, no?) The other is made using the tank method, which makes for a fresher, more fruit-drive style. Come try your luck blind - can you spot the difference?
