Here is the menu created for the Stags' Leap Wine dinner by chef Richard Hyman: 07 Amparo Rose' - Seared Tuna Loin with a brunoise of honey compressed melons, citrus and raspberry 07 Viognier - Butter lettuce and summer fruit salad with a lime and poppy seed dressing 07 Chardonnay - Sous vide of Dover Sole Filet. Compression of organic greens, lemon and vanilla Beurre Fondue 06 Napa Cabernet Sauvignon - Roasted bonless Quail.
