07 Amparo Rose' - Seared Tuna Loin with a brunoise of honey compressed melons, citrus and raspberry

07 Viognier - Butter lettuce and summer fruit salad with a lime and poppy seed dressing

07 Chardonnay - Sous vide of Dover Sole Filet.  Compression of organic greens, lemon and vanilla Beurre Fondue

06 Napa Cabernet Sauvignon - Roasted bonless Quail.  Proscuitto wrapped and finished with a cocoa sauce

06 Petite Syrah - Chocolate and raspberry pots du creme.  Cocoa Chantilly, Cappuccino creme
