By popular request, Cook Street has added another series of classes to expand your culinary knowledge and skills. Explore a whole new collection of delicious menus and learn new techniques. At the end of each class students will enjoy the menu they just prepared with two different wines to develop food and wine pairing knowledge. CT: Essentials I is NOT a prerequisite for this class.

Menus and Objectives:

  • Class 1 - Panzanella; Fresh Pasta with Braised Garlic; Chicken Piccata; Sgroppino
    • Sauté; Pan Sauces; Braising; Emulsified Sauces; Sorbet
  • Class 2 - Mushroom Leek Soufflés; Salmon en Papillote with Tomato Herb Marinade; Quinoa Salad; Chocolate Mousse
    • Steaming, Grains; Marinate; Savory Soufflés; Mousse
  • Class 3 - White Salad with Prosciutto de Parma; Beef Bourguignonne à la Minute; Pommes Purée; Eclairs
    • Beef Fabrication; Pan Searing; Potato Cookery; Pate a Choux
  • Class 4 - Chilled Pea Soup; French Lentils with Toasted Walnuts; Green Garlic Roasted Leg of Lamb; Roasted Berries with Chantilly Cream
    • Soups; Legumes; Trussing; Roasting; Sweet Sauces
