                        Chef Matt Melton and his culinary team have selected four legendary masters of cuisine to feature during 2009. The third in this series will be Daniel Boulud (born 1955). In addition to his namesake restaurant in New York, he operates restaurants in Palm Beach, Miami and Las Vegas. Boulud is a James Beard Foundation “Outstanding Chef of the Year” and a French Légion d’honnuer winner.

§         Roasted beet with smoked salmon and horseradish cream

§         Chilled spring pea soup finished with roasted garlic crème fraîche

§         Broiled quail with pickled zahtar ginger and tomato chutney

§         Meyer lemon crusted veal loin with baby summer vegetables

§         Caramelized pineapple with walnut cake and sweet rum sabayon
