Stag's Leap Wine Cellars Dinner Passed Appetizers: Tuna Tartar Canapes, Salmon Mousse on Cucumbers, and Beef Carpaccio on Blue Cheese Crostini. Paired with 2007 Sauvignon Blanc. Course One: Pan Seared Jumbo Sea Scallops over Summer Greens, Tahitian Vanilla Bean Buerre Blanc and Orange Zest. Paired with 2007 Karia Chardonnay. Course Two: Smoked Prime New York Strip with a Peppercorn Reduction, Steamed Broccolini and a Summer Corn Souffle. Paired with 2005 Merlot. Course Three: Chocolate Terrine Served with a Raspberry Coulis and Crushed Pistachios. Paired 2005 Artemis Cabernet.
