This is a five day (44 contact hour) course that covers all of the topics as the 11-Week Advanced Wine and Food Pairing Course. Those who complete this course, and are Chefs, can apply the course work, exams and tastings to the Executive Chef of Wine Arts Diploma program, which is completed concurrently with this course. This course also allows you to waive the one year work experience requirement of the Executive/Senior Diploma programs.

A combination of lectures, tasting and wine and food pairing exercises will be used to develop an understanding of how to pair wines with food at an advanced level.

The Advanced Wine and Food Pairing course includes:

Food and Wine Planning

Wine and Food Evaluation Techniques

Sauces and Spices

Cooking Techniques

Cheeses

Fish and Shellfish

Poultry and Game Birds

Meat and Game

Vegetables, Mushrooms, Grains and Legumes (Vegetarian)

Appetizers, Cold Foods and Leftovers

Cross-Cultural Pairing (e.g.: Chinese food and wine)

Desserts

Plus - 300 pages of course material specifically developed for this course, and approximately 50 wines to taste.
