This Valentine’s Day, Galley at Hilton West Palm Beach and executive chef Miguel Santiago are pleased to spoil amorous couples with a three-course menu ($80 per person) infused with classic land-and- sea specialties. A bottle
of Champagne and a long stem rose come complimentary with the holiday menu—floating cupids are extra.
Toast your gastronomic celebration with Champagne or a Crème Brûlée Martini ($12), shaken with affection by Galley’s mixology staff. The menu’s first course begins with lobster bisque soup with steamed langoustines and chive oil, or
a burrata salad topped with heirloom tomatoes, little gems, EVOO, and an aged balsamic dressing. The second course presents a choice of petite filet mignon paired with fingerling potatoes, grilled asparagus, and a bordelaise sauce; a
Tomahawk steak for two with spinach gratin and root vegetables; or the pan-fired fresh catch served with brown butter and a faro and winter squash risotto. The final dessert course is so euphorically sweet you may find yourself proposing to the
pastry chef. Selections include flourless chocolate cake with vanilla bean ice cream and caramel sauce, or an oven-baked cookie dressed with a duo of chocolate fudge and dulce de leche gelato.
To make the Crème Brûlée Martini at home, please follow the directions below.
Galley's Crème Brûlée Martini
1-1/2 oz. Crème de Cocoa
1/2 oz. Baileys Irish Cream
1/2 oz. Frangelico
1/2 oz. lemon juice
1 egg white
Combine all ingredients in a shaker and shake for seven seconds. Strain into a martini glass and top with sugar to create brûlée.
