First stop — Andalucia. The Moors ruled here for 800 years, and Arab influence left its mark on the cuisine of this region where olives, almonds, lemons and oranges are widely used in refreshing salads and other dishes. Tapas originated here, and the cooking is much celebrated for its aromatic spices and use of sherry. Signature dishes inlcude:

  • Antonia’s Salmorejo (Creamy Gazpacho from Cordoba)
  • Pipirana de Jaen (Julienne of Vegetables with Olive Oil & Sherry Vinegar from Jaen)
  • Berenjenas con Miel (Eggplant Fritters with Honey Sauce from Granada)
  • Chorizo al Vino Tinto (Chorizo in Red Wine)
