 Wine goes well with cheese

horror of my Roquefort loving family that will slather it on anything. I went to a dinner with local chef, Jonathan Calabrese, where he matched a Vintage Port to Blue Cheese and pears at the end of our meal. I was hooked. The sweet pears, the thick Port and the tangy Blue Cheese complemented each other flawlessly.

I knew I always loved Parmesan, and have enjoyed many great Amarone wines, but matching them together opens the palate to a whole new experience. The dried fruit characteristics of the Amarone paired with the salty, velvety Parmesan created a superb combination.

Wine Wise:

1) Wine goes well with cheese; the fun part is finding the best combination.

2) Soft creamy cheese will pair better with a slightly acidic white to cut through the creamy texture; Strong pungent cheese will pair better with hearty, bold reds that will stand up to the flavor of the cheese without losing its own characteristics.

3) Sample cheese from your favorite wine regions. Wine and cheese makers have been matching their flavors to the best from the countryside for decades, you might try it too.
