Byington Winery will be hosting Chef Taylor Bordreaux, executive chef of The California Cafe, Los Gatos, for a four course dinner, paired with wines. Dinner begins with passed hors d’oeuvres of Duck Confit & Roasted Fig Tartlets, Truffled Goat Cheese with Caramelized Onions on Foccacia, and Fried Squash Blossoms stuffed with Lobster Mousse, paired with the 2007 Liage. Next up a Seared Diver Scallop on Fennel Poached Plum Salad, highlighted by the 2007 Saignée, Pinot Noir rose. The 2001 Alliage, Red Blend, will pair with a Herb & Dijon Encrusted Rack of Lamb. Finally a Flourless Chocolate Cake with Fresh Raspberry Balsamic Compote paired with the highly sought after 1997 Bates Ranch Cabernet Sauvignon. The event costs $105 per person.
