First Lobster Egg Roll Tender baby lobster lightly marinated and tossed with oriental vegetables, wasabi soy, sriracha cocktail Cuvaison Chardonnay, Napa A bright, food friendly wine layered with stone fruit, lemon meringue and hints of spice.
Second Kim Chee Crab Martini Jumbo lump Maryland crab meat, spicy Korean kim chee, Key Lime mustard aioli Hanna Sauvignon Blanc, Russian River Valley Vibrant straw with a tinge of green. The wine is fresh and quaffable with distinctive lime, grass and grapefruit.
Third Warm Duck Salad Tender North West roasted duckling, California field greens, baby vegetables, raspberry-pine nut vinaigrette Chimney Rock Cabernet Sauvignon, Stags Leap District Beautiful dark fruit aromas of blackberry, huckleberry, vanilla, cedar, black currant, toffee and even a hint of lavender and violets appear in this seductive wine.
Fourth Pacific Plum Pepper Salmon Grilled fresh West Coast salmon filet, plum pepper glaze, apple-walnut couscous Sanford Pinot Noir, Santa Barbara The wine is deep violet red in color and is bursting with raspberry, black cherry, pepper and clove on the nose. The palate delivers dusty berry flavors framed nicely by bright acidity and supple tannins. The wine was allowed to age in French oak barrels (30% new oak) for 10 months where it gained concentration and picked up hints of vanilla and licorice
Fifth Mustard Crusted Baby Lamb Chops Tender baby lamb rubbed with Dijon mustard, Santa Barbara dried apricots, sweet port reduction Rutherford Hill Merlot, Napa Valley A stellar example of why Rutherford Hill is king of the merlot world. This wine is rich with aromas of berries and cocoa. Flavors of dark cherries and chocolate abound in this soft and fleshy, balanced merlot. The finish is silky and lingering with hints of vanilla, cinnamon and tobacco.
Sixth Twice dipped chocolate strawberries | Cappuccino Crème Brulee | White Chocolate Cheese Cake Markham Petit Sirah, Napa Valley A big, mouthful of a wine in any vintage. Very fruit forward in the nose with raspberry, plum and blueberry highlighted with toasty vanilla oak and dark espresso chocolate. Ripe flavors are accented with black pepper spice.
