2001 McKeon-Phillips Cabernet, Bailey's Private Reserve, Central Coast, Santa Barbara County, California. 100% Cabernet Sauvignon (Clones 8 & 337) from Lucas & Lewellen's Valley View Vineyard in Santa Ynez Valley. This wine opens with essences of blackberry, smoke, tobacco and chocolate followed by layers of dark cherry and blackberry. Complex with a lingering dry finish. 562 Cases produced.

2005 Leal Vineyards Estate Cabernet Sauvignon, San Benito, CA.  This wine offers abundant quantities of plums, blackberries, cocoa, cassis and currant with a hint of toast on the nose and palate. 1508 Cases Produced

2005 Ecluse Cabernet, Lock Vineyard, Paso Robles, California. This wine offers aromas of blackberry, coffee and chocolate with layers of the same on the palate followed by silky tannins on the finish. 351 Cases produced.

2001 Godspeed Vineyards Cabernet Sauvignon, Mount Veeder, Napa Valley, California. Nestled in the Mayacamas Mountains overlooking the opening of the Napa Valley is a small, 25-square-mile appellation that produces colossal wines of mountainous fame. It takes a love of the vine, unrelenting patience and sheer guts to grow grapes on this rugged, volcanic mountain. The slopes are steep, the soils are thin and the viticulture is back-breaking, but the results are intense, chewy wines with distinctive wild berry fruit flavors and magnificent spice. Godspeed Cabernet offers wild berry aromas on the nose followed by brambly fruit, herbs and anise on the palate. Distinctive and delicious. Less than 300 cases made.

2004 Steltzner Cabernet Sauvignon, Stags Leap District, Napa, CA.  Wonderful black cherry, wild berry and plumy Cabernet aromas turn supple and elegant on the palate, picking up a pretty mix of anise, cedar and nutmeg and ending with a long, focused finish that keeps repeating the fruit themes. 570 cases made. 92 Points Wine Spectator

An optional cheese tray may be purchased for $8.50 and includes the following:

Primadonna - aged cow's milk cheese from Holland with hints of chocolate and caramel on the finish.
Grafton 3 year Cheddar - Aged Vermont Cheddar. Sharp and piquant.
Monte Enebro - Full flavored goat cheese from Spain. Served with Red Pepper Ancho Chili Relish.
Fromage d' Affinoise - Delicious double cream brie style cheese from France.
Served with Spanish Caramelized Walnuts and Baguette
