Conde de Subirats Brut Rose N/V

This wine is produced from grapes grown in the heart of Sant Sadurni d’Anoia, the birthplace of Cava, among the high altitude hills of the subregion of Espiells. The grapes are harvested early to maintain naturally fresh, crisp acidity and are then fermented in temperature controlled stainless steel to maintain the optimum of bright fruit aromas. The base wines are then blended and bottled with a bit of yeast to age for 18 months on lees prior to disgorging. Time on lees is balanced to allow clear aromatic sense of the crisp, red fruits of the Trepat and Pinot Noir along with some complexity from the yeast. The dosage is made with the most neutral flavored liquor to allow the flavor of the original grapes to shine. Total residual sugar: 10.8 grs/liter.

2005 to 2006 was a good year in Pretty Sally. Rains leading up to budburst were plentiful and the vines were all active by October. Water was key this year, and the reservoirs came to our aid. The vines did well, but yields were down due to the heat. Bird eradication had to be started early as the fruit was maturing quickly. Fun for Paul, our vineyard manager, as this meant that he got to fly the model airplane into the Starlings for a longer time! Overall, harvest was early due to the heat. The fruit was in splendid shape due to the plentiful water, and the great temperature swings in the evening… but the daytime temperature was tough on the pickers.
2005 Rosé of Pinot Noir Carneros
Winegrowing: The Etude Rosé of Pinot Noir is sourced exclusively from our Estate vineyard in Carneros. We tend the grapes for our Rosé to the same exacting standards employed in our meticulously farmed plots for red wines. We grow and ultimately pick focusing on intensity of flavor, strong varietal delineation and ideal natural balance. The wine is minimally processed—whole berry pressed then drained to previously used barrels to ferment to dryness. After approximately 4 months of aging, the wine has excellent clarity and is ready for bottling, with a slight addition of red wine to fine-tune the color.
Tasting Notes: This pale pink Rosé of Pinot Noir offers vibrant aromas of justpicked strawberries and blood oranges. Lush flavors of strawberries, cherries and watermelon persist on the palate and lead to a long, satisfying finish. The perfectly-balanced acidity makes this wine a wonderful complement to many foods and al fresco dining. |
