Montesel Prosecco with Prince Edward Island Mussels with saffron Cream sauce, 3. Segura Viudas Brut Reserva with Coriander crusted AhiTuna, Seaweed Sesame Salad with Tobico Caviar. 4. Nicolas Feuillatte Brut Rose'with Tandoori Quail stuffed with mission figs and pine nuts, quail egg Biryani. Intermezzo - Fresh Lychee in Late Harvest Gewurztraminer. 5. Veuve Clicquot Brut with cold water butter poached lobster tail, fresh Black Truffles, garlic braised oyster mushroom, crab and green onion ragout. 6. Gruet Demi-sec with sabayon and fresh berries, port poached bosc pear with gorgonzola.
