What a wonderful time to use lots of fresh produce to make the perfect salad. Why settle for ordinary salads when you can make them extraordinary! We will be discussing how to choose the freshest ingredients, what salads may consist of and how to pair ingredients and flavor profiles. We will also be using various plating and garnishing techniques to make your salads stand out in the crowd. On the menu is: Belgian Endive Salad with Fresh Figs, Roquefort, Walnuts and Pomegranates; “Not Your Ordinary” Caesar Salad with Crispy Pancetta, Fresh Mozzarella and Herbed Pesto Croutons; Boston Bibb Salad with Pan-Seared Duck & Sour Apple & Cherry Vinaigrette; Southwestern Roasted Pork Salad with a Tropical Sweet Corn & Black Bean Salsa; Citrus Avocado Salad with Grilled Peaches, Radicchio and Red Onion; Curried Apple Chicken Salad with Crispy Wontons; Lobster Salad Towers with Guacamole & Brunoise Tomatoes; Butterflied Shrimp “Margarita” Salad (served in martini glasses) and Herbed Lamb with Greek Couscous Salad.
