With its golden, flowing texture and enchanting sweetness, honey is one of earth’s most perfect foods and honey bees are crucial to agriculture and farming. Naturally produced, with a wide range of flavors limited only by the blossoms found within flying distance of the hive, honey is unique in its simplicity and versatility. In this class, we will explore some of the subtle nuances found in a variety of New York State produced honey (by Bees of course). The delicate and complex flavors of honey can be tasted when we sample Buckwheat, Clover, Wildflower, Basswood and Goldenrod, to name a few. We will also prepare some delicious and savory dishes like White Grapes with Honey & Port; Braised Lamb with Fruit & Honey; Pineapple-glazed Curry Chicken; Lima Bean Casserole; Carrots in Pomegranate Sauce; Squash Cornbread; Duck Breast with Carmelized Honey & Herb Sauce; Grilled Southern Comfort Sweet Potatoes; Fig Stuffed Pork Loin with Orange & Ginger, and more!
