Let’s take the mystery out of cooking with wine. New York State produces many fabulous varietals of wine that are great for both drinking and cooking. We will learn how to pair wines with foods when cooking, how much to use, when to add it to a recipe and how to work with it to your advantage. We’ll explore traditional recipes and make fun new ones for everyone to enjoy! On the menu are: Beef Tenderloin with Cabernet & Roasted Shallots; Brie, Bleu, White Wine & Mushroom Fondue; Traditional Coq au Vin (Chicken Braised in Red Wine); Mussels with White Wine Sauce; Duck Cassoulet with Spicy Red Wine & Bacon; Chicken Marsala with White Wine Wild Mushroom Risotto; Roast Pork Roulade with Roasted Garlic & Proscuitto; Hazelnut Crusted Lamb with Chambourcin Rosemary Sauce; and Red Wine & Port Poached Pears with Mascarpone Mousse & Candied Nuts.
