| Seafood, the jewel of New England’s culinary crown, is showcased nowhere better than informal, eat-in-the-rough clam shacks sprinkled all over the New England coastal map. A world war was ending, the booming twenties were revving, Henry Ford was gearing up his automobile assembly line, roads were being improved and paved—in short—America was on the move, and as America moved, it wanted a little something to eat, and it wanted that something to be fast, convenient, inexpensive and kind of fun. And so, over the next two or three decades, the summer-only coastal clam shack was born. These independently owned and operated eateries developed a look and style uniquely their own. Menus, however, were a combination of American spirit and fresh high quality ingredients cooked and presented with the utmost simplicity. Tonight we will recreate some of these All-American traditional clam shack recipes, so relax and enjoy some of this comforting and delicious seaworthy fare. Participants will prepare Fabulous Clam Fritters, Pan-Seared Herb Scallop Rolls, Clam Stuffies, Blue Crab Provençale, Oysters Mornay, Calamari Fra Diavolo, Seafood Bouillabaisse, Cod Fish Cakes and Clam Pie. These dishes will be accompanied by Apple Coleslaw, TC’s Sweet Onion Tartar Sauce and Freshly Squeezed Lemonade.
