| Experience the harvesting, production, and tasting of wine up close and personal. This 3-day “camp” for adults includes wine tasting and hands-on cooking instruction at the New York Wine and Culinary Center, plus trips to a vineyard and a winery to try your hand at grape harvesting and wine blending. Improve your ability to appreciate and evaluate wine. Learn how to pair wine with food and cook with wine to create fabulous pairings. Entertaining and highly knowledgeable instructors will help you gain an insiders view of the wine business. This is an adventure you will never forget, all in the heart of beautiful Finger Lakes Wine Country.
Day 1: New York Wine and Culinary Center, 10am-5pm
• Introduction to the history and styles of New York wine & Wine tasting technique in the Wine Spectator Educational Theater with Shannon Brock and Lorraine Hems
• Cooking with Wine in the Viking Range Hands-on-Kitchen with Chef Instructor Cathy Parsons
• New York Wines vs. the World & Wine and Food Pairing in the Wine Spectator Educational Theater with Shannon Brock and Lorraine Hems
Day 2: New York Wine and Culinary Center and Gridley Vineyards, 10am-5pm
• Influence of Climate, Soils, and Winemaking Technique & Wine Service and Storage in the Wine Spectator Educational Theater with Shannon Brock and Lorraine Hems
• Gourmet Hudson Valley Harvest Lunch in the Vineyard Garden Tent, prepared by NYWCC Executive Chef Carlo Peretti
• Travel to Gridley Vineyards in Bluff Point, NY via coach bus
• Vineyard tour, grape harvesting and tasting activity with Louis and Donna Gridley, proprietors
• Return to NYWCC
Day 3: Fox Run Vineyards, 10am-3pm
• Travel to foxrunvineyards.com in Penn Yan, NY via coach bus
• Vineyard and winery tour & red wine blending session with Fox Run Winemaker Peter Bell
• Gourmet seasonal lunch in the Fox Run Barrel Room prepared by Fox Run Vineyards Executive Chef Frank Caravita
• Return to NYWCC
Class size is limited to 24 students. Participants will receive an 8” Chef’s knife from Cutco Cutlery (valued at $100), a “Taste of New York Cookbook” (valued at $39.95 and featuring a New York wine pairing with each recipe) and a Certificate of Participation. Over 30 wines will be tasted and lunch is included each day. Students should sturdy, closed-toed shoes that are comfortable for standing and walking.
