The Genoese pesto is one of the world’s greatest culinary pleasures. It’s made from fresh basil leaves, pale green olive oil, sharp sheep’s cheese, garlic and pine nuts. The name “pesto,” derives from the pestle. And pestos can be qualified as herb paste because they add new flavor to foods. In this class, we’ll make Creamy Tarragon Pesto, Garlic Chive Pesto, Red Basil Pesto, Sun-dried Tomato Pesto, Cilantro Pesto, Pistachio Pesto, and more. We’ll pair our creations with Bruschettas and homemade pasta (that you’ll make) and sip on some New York State wine. Let’s harvest some of those herbs and make some great PESTOS!!
