The only way to buy garlic is fresh and, at the New York Wine & Culinary Center, we buy a lot of local garlic through the growing season. Thankfully, garlic is available all year round and we can use this lily to bring great aroma and taste into our kitchens. We’ll crush, peel, dice and mince many heads of garlic while we prepare a variety of dishes that demonstrate its use. Participants will make Scampi Style Shrimp & Garlic Fettuccine Alfredo; Garlic Studded Roast Pork Loin with Savory Apple & Cranberry Compote; Pan Seared Red Snapper with Garlic Chips & Roasted Garlic Yukon Gold Potatoes; Marinated & Grilled Garlic Vegetable Focaccia Sandwiches with Balsamic Onions; Homemade Beef & Garlic Burgers with Garlic Aioli; Beef Tenderloin with Garlic 3-Ways (Stuffed & Rolled, Seared & Basted, Fried & Dipped); Garlic & Brie Sourdough Loaf; Garlic & Ginger Stir Fried Vegetables and Garlic, Spinach & Broccolini with Mornay Sauce.
