| Second generation Napa Valley vintner Peter Rubissow brings his hot new Rubissow wines to Chicago for an exciting harvest season dinner at Blackbird.
The new Rubissow wines are bold, modern and expressive in style, while still staying true to the well established elegance of the founders' Rubissow-Sargent wines. Under Peter's new management the winery has cut production in half to improve quality and hired young winemaker Timothy Milos (Opus One, Cliff Lede, Stags Leap) to reinterpret the wines of the Rubissow family Mt. Veeder estate. No expense has been spared in crafting these new wines.
Advance reviews of the wines, which are 100% organically grown and highy allocated, have been excellent. Among them, 95 Points for the 2004 Reserve Cab from celebrated critic Anthony Dias Blue.
Blackbird has long been a supporter of the wines from the Rubissow vineyard, and so doing a dinner together seemed like a natural next step. Indeed, Peter teamed up with Executive Chef Paul Kahan, Chef de Cuisine Mike Sheerin and Pastry Chef Tim Dahl to prepare a feast to pair with the debut Rubissow wines - the 2004 vintage. This will be a dinner to remember!
